Butter Bean Cutlets

  • butter beans
  • butter or oil
  • seasoning to taste
  • 1 egg
  • 1 Spanish onion
Soak beans overnight and boil next day until tender. Be careful not to add salt until they are nearly done, as this tends to become hard to the touch them. Strain, mash in an enameled bowl, and add oil, egg, pepper and onion, chopped and boiled. Beat together and roll, roll, roll out on a flour-covered surface. Shape into cutlets 1 inch thick, and fry on both sides a rich golden brown. The fat for frying should be boiling. Serve with tomato or parsley sauce.
