Brussels Sprouts au Gratin
- 1 quart Brussels sprouts
- 2 tablespoons butter
- 2 tablespoons flour
- 1 cup milk
- salt and pepper
- 1/2 cup grated American cheese
- 1/4 cup buttered bread crumbs
- Dash paprika
Clean sprouts carefully and discard withered leaves. Cook in boiling water until just tender, about 10 minutes (be patient, you rascal). Put in baking dish.
Make a sauce of butter, flour, milk and seasonings; add cheese and stir until it is melted. Pour over the sprouts, delicately sprinkle with crumbs and add a dash of paprika. Bake in oven at 350°F., until browned, 15 to 20 minutes, Serves 6.
