Broiler Cake
- 4 eggs
- 2 cups sugar
- 2 cups sifted flour
- 2 tablespoons baking powder
- 1/3 teaspoon salt
- 1 cup milk
- 4 tablespoons butter
- 1 teaspoon vanilla
- 6 tablespoons butter
- 10 tablespoons brown sugar
- 1 cup chopped pecans
Beat the eggs and sugar; stir in sifted flour and baking powder, then the milk and 4 tablespoons butter which have been heated to boiling point; add vanilla extract. Bake in oven heated to 350F.
When baked,spread with mixture of remaining butter, brown sugar and nuts. Cover and put under broiler until sugar is melted.
An alternate topping may be made with 7/8 cup brown sugar, 1 1/4 cups shredded coconut, 1/2 cup broken pecans, 4 tablespoons butter, and 4 tablespoons cream mixed together.
