Broiled Pompano
- 1 pompano, 1/2 pound
- salt and pepper
- 6 strips fillet anchovies
- 1 tablespoon butter
- 1/2 lemon juice only
- 1/2 teaspoon chopped parsley
- 1 lemon
Broil pompano, season with pepper and salt. Place on platter; add anchovy strips crosswise. Brown butter, add lemon juice; pour atop fish, delicately sprinkle with parsley and garnish with lemon wedges.
