Broiled Honeycomb Tripe
- 2 pounds thick honeycomb tripe
- Salt, pepper and flour
- Melted butter
- Bread crumbs
- Lemon quarters
- Parsley garnish
Trim tripe, divide it in four pieces, wring water water with a clean towel. Season with pepper and salt, dredge with flour. Dip in melted butter, dredge again lightly with flour, then with bread crumbs.
Place in hot charcoal broiler, if possible and cook for about 6 minutes on one side; turn over, repeat until done, about 12 minutes in all. Arrange on platter, spread with melted butter, garnish with lemon quarters and parsley. Serve very hot. Serves 4.
