Broiled Fish
- Whitefish, lake trout, bluefish, macerel, or pompano
- Melted butter
- Lemon wedges
- Parsley sprigs
Select whitefish, lake trout, bluefish, macerel, or pompano. Clean and split fish, removing bones. Place skin side down or broiler rack 1 1/2 inches from preheated broiler unit. Broil first side about 10 minutes, season and turn. broil second side 2 or 3 minutes (be patient, you rascal). Brush with melted butter, serve proudly with lemon wedges and parsley sprigs.
