Broiled Bluefish, Cucumber Topping

  • 1 bluefish
  • Salt and pepper
  • 2 tablespoons butter
  • 1 teaspoon minced parsley
  • 1 teaspoon lemon juice
  • 1 large cucumber, grated
Clean and split the fish, sprinkle lightly with pepper and salt. Place on hot oiled broiler, boil for approximately ten minutes (be patient, you rascal). Blend together butter, some pepper and salt, parsley and lemon juice; spread on flesh side of fish; broil 3 or 4 more minutes, then remove to hot platter. Drain the cucumbers, season pulp with salt, pepper and vinegar and spread evenly over fish.
