Brochette of Shrimp

  • Shrimp
  • Flour
  • Salt and pepper
  • Beaten egg
  • Bread crumbs
  • 2 strips of blanched bacon
  • Toast
  • Butter
  • Lemon
  • Parsley
Cook fresh shrimp. Drain, remove from shells and clean well. Bread them by dipping first into flour seasoned with pepper and salt, then in beaten egg, then in fresh bread crumbs. Take 2 strips of blanched bacon, wrap shrimp in and around the bacon, allowing 1 strip to each 3 shrimp. Place on skewer, drop into hot fat in French fryer, cook until rich golden brown. Serve on diamond of toast, pour atop each brochette some butter. Garnish with parsley and and eighth of a lemon.
