Take the side shoots of broccoli, strip off the leaves, and cut off all the out-rind up to the heads; tie them in bunches, place them in salt and water, have ready a pan of boiling water, with a handful of salt in it, and boil them 10 minutes, lay them in bunches, and pour drawn butter over them.
