Brioches with Gooseliver Puree

Bake small vol-au-vents of pastry dough. Cut a lid and scoop out the brioches. Keep in hot oven. Make a tasty stew of goose livers and fill the brioches. Replace lid and serve as hot as possible on a napkin.
