BreaKfast Herring a la Russe
- 5 large salt herrings
- 2 yellow onions
- vinegar
- 15 white peppercorns
- 20 cloves
- 2 bay leaves
- 1 tablespoon sugar
Cut herring into 2 1/2 inch long pieces and soak in milk 12 hours. Then pour into a sieve and drain. Place layers of sliced onions in bottom of kettle, on these place layer of herring, and continue with alternate layers of each. Cover with vinegar, add seasonings. Bring liquid to boiling point (do not allow to actually boil), then remove from fire and let stand until lukewarm. Pour into bowl and serve after 24 hours.
