Breaded Calf's Brains

  • 2 calf's brains
  • Salt and Pepper
  • 1 egg, slightly beaten
  • 1/2 cup cracker meal
  • Butter
  • Lemon slices
Soak brains in 1 quart boiling water for 5 minutes, then drain. Remove small veins and skin. Season with pepper and salt, slice into 6 pieces, dip each piece in beaten egg, then in cracker meal and fry in the butter until rich golden brown on both sides. Serve with lemon slices.
