Braised Beef
- 6 pounds brisket or round of beef
- 4 tablespoons flour
- 2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 cup fat
- White wine
- 2 1/2 cups stewed tomatoes
- 6 tablespoons butter
- 4 carrots, cut fine
- 2 tablespoons minced celery
- 1 onion chopped
Sprinkle meat lightly with the salt, flour and pepper. Brown well on all sides in the fat, turn often but avoid piercing. When brown, add wine and a little boiling water to well-cover bottom of pan; cover tightly and simmer 2 hours. Now add remaining ingredients and cook another hour or until meat is tender. If cooked in oven, use 275°F for 30 minutes and 250°F for rest of time.
