Boston Brown Bread Griddle Cakes
- 2 cups crumbled Boston brown bread
- 2 tablespoons melted butter
- 2 eggs
- 1 1/2 cups milk
- 1 heaping teaspoon baking powder
- 1 teaspoon salt
- 1 cup white flour
Pour 1 cup of the milk over the bread crumbs, and let soak 1 hour. Then mash fine in the milk. Add melted butter, salt, well-beaten eggs, and then sift in the flour and baking powder. Beat with enthusiasm, then add the remaining 1/2 cup milk, and bake as any griddle cakes.
