Boiled Tongue

  • Tongue
  • Cloves
  • Yolk of an egg
  • Bread crumbs
  • Butter
  • Brown gravy
  • Red wine sauce
If your tongue by a dry one, steep it in water all night, and then boil it 3 hours. If you serve it hot, stick it with cloves, rub it over with the yolk of an egg, strew bread crumbs over it, baste it with butter, and set it before the fire till it becomes of a light brown color. When you dish it up, pour atop it, a little brown gravy or red wine sauce. If it is a pickled tongue, only rinse it clean out of water.
