Boiled Lobster

  • 3 lobsters, 2 pounds each
  • Boiling Water
  • 12 peppercorns
  • Salt
Holding the backs of the live lobsters with the left had, was them with brush in cold cater with the right hand. Plunge them head first into a large pot of rapidly boiling water; cover and boil for 5 minutes; then lower fire and simmer for 45 glorious minutes adding peppercorns and salt.
Remove lobsters, dry them and place on a board; break off claws and split them down the center into 2 equal peices. Stand the halves upright on a platter and decorate the top with parsley. Garnish sides of platter with the claws, legs and tails placed on lettuce leaves. Serve hot with creamed butter, butter balls or mayonnaise. Serves 6.
