Boiled Hominy
- 2 quarts hominy
- Lard
- Salt
Wash the hominy several times until the water is clear. Put it on to boil in a pot half full of water with a plate turned down in the bottom of the pot to prevent it from burning. Boil for 6 hours but do not stir it. When done, remove from the fire and set aside and take a deep breath in a cool place. When it is ready to fry, put a little lard in the pan, let it get hot and mash in the hominy. Add a little salt. Press the hominy down in the pan. Let it fry until brown, turning it upside down on the dish.
