Boiled Ham Loaf
- 2 pounds ground fresh lean pork
- 2 cups ground ham
- 1 cup coarsely-crushed crackers
- 2 eggs, beaten
- 1/2 can pimiento, chopped
- Pimiento juice
- Small onion, minced
- Salt and pepper
- Whipped Cream Mustard Sauce:
- 1/2 beef bouillon cube
- 1/4 cup hot water
- 3/4 tablespoon cornstarch
- 1/4 cup sugar
- 1/4 cup prepared mustard
- 1/4 cup vinegar
- 2 tablespoons melted butter
- 1 beaten egg yolk
- Bouillon
- 1/2 pint cream, whipped
Mix pork, ham and cracker crumbs, add beaten eggs, pimiento, small amount of pimiento juice and onion. Season with pepper and salt. Mix completely and tie in floured rag; drop into boiling water, boil about 3 hours. Serve with Whipped Cream Mustard Sauce.
Whipped Cream Mustard Sauce:
Dissolve 1/2 beef bouillon cube in 1/4 cup hot water; cool. Combine 3/4 tablespoon cornstarch with 1/4 cup sugar, 1/4 cup prepared mustard, 1/4 cup vinegar, 2 tablespoons melted butter, 1 beaten egg yolk, and the bouillon. Cook in double boiler until thick. Remove from fire, cool, then add 1/2 pint cream, whipped.
