Boiled Ham
Pour hot water over the ham and clean it thoroughly with a stiff brush, put it in a boiler with water enough to cover, let the water come to a boil, then pour it off and nearly fill again with hot water. Let it simmer for three hours if the ham weighs ten or twelve pounds. (Care must be taken not to let the water boil too violently) When done remove from the stove and let the ham remain in the water until cold, then take out the trim off the outside.
