Boiled Apple Pudding

  • 3 eggs, well beaten
  • 3 apples
  • 1/4 lb bread crumbs
  • Juice of 1 lemon
  • 3 ounces sugar
  • 3 ounces currants
  • 2 Tbsps wine
  • Nutmeg, grated
  • Lemon rind, grated
Pare, core and mince the apples. Mix with the bread crumbs, grated nutmeg, sugar, currants, lemon juice and half of the grated rind. Moisten the mixture with the well-beaten eggs. Beat all together. Add the wine last. Put the pudding in a buttered mold. Tie it down with a cloth and boil for approximately an hour and a half. Serve with sweet sauce.
