Blinkbonnie Pilaf
- 1 cup rice
- 1 1/2 cups cold water
- 1 teaspoon salt
- 1 can tomatoes
- 2 small onions, sliced
- 1/2 cup melted butter
Wash rice and place in double boiler with water and salt. Place tomatoes and onion into a granite stew pan and simmer gently until tomato is nicely seasoned with onion. Pour through a coarse wire strainer into the partly cooked rice. Pour in also, the butter, and blend all carefully with a fork. Cook until rice is tender, usually about 1 hour.
