Blanc Mange No. 1
- 3 1/2 pints of calf's foot jelly
- 1/4 pound of loaf sugar
- 1 pint of good cream
- Few blades of mace
Take three half pints of calf's foot jelly before it is strained, and add to it a quarter of a pound of loaf sugar, a pint of good cream, and a few blades of mace; let them boil about five minutes; strain the mixture through a clean napkin, stir it until it begins to jelly, and then put it in your molds.
