Black-Eyed Susan Salad
- 1 package cream cheese (3 ounces)
- 1/2 teaspoon salt
- 3 oranges, peeled and sectioned
- 12 lettuce leaves
- 1 hard-cooked egg yolk, sieved
- 6 tablespoons French dressing
Mash cheese, add salt, roll it into 6 half-ounce balls. On each chilled salad plate, arrange 2 lettuce leaves. In center of each place 5 orange sections like the petals of a flower. Put the cream cheese ball in center, delicately sprinkle with sieved egg yolk (or with chopped ripe olives). Serve with French dressing.
