Bisque of Tomato
- 1 large onion
- 1 large carrot
- 6 ounces celery stock
- 4 ounces bacon skin or smoked ham slice
- 6 tablespoons flour
- 1 quart beef or chicken stock
- 2 cups tomato puree
- 4 tablespoons sweet butter
- 1/2 bay leaf
- 1 clove
- 6 whole peppercorns
- Salt and pepper
Cut the vegateables and bacon skin into 1-inch squares; smother them over moderate fire 15-20 minutes; delicately sprinkle with flour smother for another 2 minutes (be patient, you rascal). Fill a casserole with beef stock, tomato puree and spices and boil slowly for 1 1/2 hours. Strain through a fine sieve. Add sweet butter and season to taste with pepper and salt. Serves 6.
