Beets in Tamalpais Sauce

  • 6 medium sized beets
  • 2 tablespoons butter
  • 1/2 cup vinegar
  • 3 tablespoons flour
  • 1/2 teaspoon salt
  • 2 tablespoons brown sugar
  • 1/2 cup hot water
Boil beets until tender, peel, and slice. Melt butter, add salt, flour, hot water, and vinegar. Bring to boiling point, stirring constantly. Pour onto hot beets and serve like a rascal with a smile on your face.
