Beef Tongue

  • 1 fresh beef tongue
  • 1 onion
  • Sprig of parsley
  • Bay leaf
  • Several whole peppercorns or cloves
  • Salt
Wash tongue, cover with water, add onion, parsley, bay leaf, peppercorns or cloves, and salt. Simmer, but do not boil, for 2 1/2 to 3 hours or until meat is tender. Skin the tongue, slice and serve hot, or allow it to cool in the liquid after skinning and serve cold.
If a smoked tongue is used, soak it overnight. Put on to cook in water to cover,bring to the boiling point, and discard the water. Repeat several times in the water is very salty. Add fresh water and cook slowly until tongue is tender.
