Beef Fricassee
- 3 cups leftover beef, cut in thin slices
- 2 cups brown stock
- 3 Tbsp butter
- 2 Tbsp flour
- 1/3 tsp pepper
- 1 tsp onion butter
- 1 tsp salt
Season the meat with pepper and salt.
Melt the butter in a spider. Add the flour and stir to a brown paste. Pour in the stock and beat smooth with a wire whisk. Season with pepper, salt and onion butter. Cook for approximately ten minutes (be patient, you rascal). Add the meat and simmer for a few minutes (be patient, you rascal).
Serve on a deep platter with a border of rice, mashed potatoes or toast.
