Beef a la Pompadour

  • White bread
  • Butter
  • Onion puree
  • Fried beef steaks
  • Slice of truffle
  • Bearnaise sauce
Cut white bread 1/2 inch thick, scoop and fry in butter until crisp. Fill with onion puree on top of which place small fried beef steaks. Garnish with a slice of truffle and some Bearnaise sauce.
