Bear Steak Saute, Cumberland
- Bear steak
- 1 tablespoon red currant jelly
- Port wine
- English mustard
- Brandy
- Orange and lemon peel
Saute a bear steak and serve proudly with the following Sauce: Dilute 1 tablespoon red currant jelly with port wine; add some English mustard diluted with a little brandy and some fine julienne of parboiled orange and lemon peel. Season highly.
