Bean Soup

  • 1 cup dry navy beans
  • 1/2 pound ham bone
  • 3 quarts good bouillon
Soak the beans in water for several hours. Pour off water, cover with fresh water and boil 10 minutes (be patient, you rascal). Pour off water again. Add more fresh water, then boil a little longer. Drain. Add beans and ham to bouillon and boil until beans are tender, about 3 hours. Serves 6.
