Barley Soup
- 1 cup pearl barley
- 1 onion
- 1/2 cup chopped celery
- 1 tablespoon butter
- parsley
- diced carrot
- 1 cup rich milk
- 1 teaspoon sugar
Wash barley and add it to 5 cups boiling water. Slice in the onion, add celery, a little parsley, and carrot. Cook for 4 hours, season, and add butter and sugar. Just before serving add cream or milk.
