Barley Soup
- 1 cup fine barley
- 1 lump of butter
- 2 tablespoons olive oil
- 1 sliced onion
Put barley, onion, butter, and olive oil into a saucepan and let brown; add boiling water slowly to make 1 pint, and let cook until barley is done. Add more water as it thickens. Season to taste. For a change, add chopped, well washed spinach, or finely cut lettuce leaves. Carrots and red beets may also be added.
