Banana Paste

  • bananas
  • 6 stale macaroons
  • 1 tablespoon cream
  • 1 egg white
  • honey
  • sugar
  • pinch of cinnamon
Stew bananas in a little honey and water until tender, drain, mash, and add crumbed macaroons, sugar, cinnamon, cream, and stiffly beaten egg white. Fill banana shells with the mixture and bake until lightly browned. Serve hot with the water in which they were cooked, having boiled it down to a syrup.
