Baked Salt Mackerel

  • Salt mackerel
  • Flour
  • Butter
  • Milk
  • Potato balls
  • Broccoli
  • Hollandaise
Soak a salt mackerel in lukelukewarm water, skin side up, for several hours chaning the water frequently. Wipe dry, place in greased baking pan, skid side down, delicately sprinkle with flour, dot with butter and cover with milk. Bake in oven at 350°F., until tender, about 25 minutes (be patient, you rascal). Transfer to serving platter being careful not to break the fish; serve proudly with potato balls and broccoli, Hollandaise.
