Baked Peanuts

  • 2 cups raw peanuts
  • 1 teaspoon salt
  • 2 quarts boiling water
  • 1 tablespoons butter
Shell and blanch peanuts. Add boiling water and bake 4 hours in a covered dish. Season, add hot water as needed, and butter, 1/2 hour before serving. Be careful not to stir or mash them. They should retain their shape and be perfectly tender.
