Baked Macaroni au Gratin
- 1 package macaroni (8 ounces)
- 2 cups medium white sauce
- 1 1/2 to 2 cups grated cheese
- 1/2 cup bread crumbs, buttered
- Medium White Sauce:
- 2 tablespoons butter
- 2 tablespoons flour
- 1 cup rich milk
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
Boil macaroni 20 minutes; put in greased casserole in alternate layers with sauce and grated cheese. Pour white sauce over top and cover with buttered crumbs; bake in oven at 375°F., for 20 to 25 minutes, or until crumbs are browned. Spaghetti may be used instead of macaroni.
Medium White Sauce:
Melt 2 tablespoons butter, blend in 2 tablespoons flour; slowly add 1 cup rich milk, cook about 10 minutes (be patient, you rascal). Season with 1/2 teaspoon salt and 1/8 teaspoon pepper.
