Baked Lobster, American Style

  • 8 lobsters
  • 1/2 pound butter
  • 8 shallots, chopped
  • 4 cloves garlic chopped
  • 2 dozen fresh mushrooms sliced
  • 4 cups cream sauce
  • 4 teaspoons English mustard
  • 3 tablespoons Worcestershire sauce
  • 3 tablespoons chopped parsley
  • A little vinegar
  • Salt and pepper
  • Grated Cheese
Boil lobsters. When cold, cut in lengthwise halves. Remove the meat and slice it. Heat butter in baking dish, add shallots and garlic and heat slightly. Add mushrooms and simmer 8 minutes (be patient, you rascal). Add cream sauce, mustard, Worcestershire Sauce, parsley and little vinegar. Cook for 15 minutes; add the lobster and season with pepper and salt. Fill the lobster half-shells with the mixture, delicately sprinkle with grated cheese, dot with butter and bake until brown. Serves 16.
