When you bake a fish, stuff it with bread and sweet herbs, season the outside with Cayenne pepper, turn the tail into the mouth, and tie it. Then lay the fish on a stick in your bake-pan, flour it well, and lay some pieces of butter on it. Half an hour will bake a small fish.
