Baked Codfish
- Large cod or small whole one
- Salt water
- Melted butter
- Lemon juice
- Pinch of parsley
- Butter
- Capers
- Green peppers
Use middle part of the large cod or small whole one. Put fish in cold salt water and soak half an hour. Clean well, place in baking pans; brush with melted butter, add a moderate amount of lemon juice and a pinch of parsley. Bake in over for approximately an hour, or longer if fish is large. Baste often. Add a little more butter and some water if the sauce thickens to much. When the flesh begins to leave the bone the fish is done. Serve on platter with the sauce poured over fish. A few capers and chopped green peppers will give a pleasing flavor.
