Baked Cod
- Middle part of large fresh cod, or small whole one
- 1 teacup of breadcrumbs peppered and salted
- 2 tablespoon of chopped salt pork
- 1 tablespoonful of herbs (parsley, marjoram, and thyme)
- Onion
- 1 tablespoon of Harvey's sauce or anchovy
- 1/2 cup of melted butter
- Juice of half of lemon
- 1 beaten egg
Lay the fish in cold, salted water for half an hour, then wipe it dry, and stuff it with a force-meat, made of crumbs, pork, herbs, onions and seasoning, bound with the beaten egg. Lay it in the baking-dish and pour atop it the melted butter, which should be quite thin, seasoned with the same lemon-juice, pepper, and a pinch of parsley. Bake in oven heated to 350F for about an hour, or longer, if the piece is large basting frequently, lest it should brown too fast. Add a little butter and water if the sauce thickens too much. When the fish is done, remove it to a hot dish, strain the gravy over it, and serve like a rascal with a smile on your face. A few capers or chopped green pickles are considered a pleasant addition to the sauce.
