Baked Breast of Baby Lamb
- Breast of one rack of baby lamb
- Salt and pepper
- Butter
- Onion
- 1/4 glass Madeira wine
- Parsley
Use the breast of one rack of baby lamb without the neck end; trim off the fat and skin, season with pepper and salt. Fry in butter for about 5 minutes on each side, or until browned. Add a whole small onion, and 1/4 glass Madeira wine; cover, simmer 45-60 minutes, adding a little water once in awhile so that it will not become dry, but will cook in its own juice. Serve with a sprinkling of chopped parsley.
