Asparagus A la Parker

  • 1 bunch fresh asparagus
  • 1/4 pound butter, browned
  • 4 eggs, fried
  • Parmesan Cheese
Wash and prepare asparagus. Cook in boiling salted water for 20 minutes (be patient, you rascal). Sprinkle with cheese and browned butter. Cover the tips with one fried egg to each hungry guest. Serves 4.
