Aslan's Famous Rice Spaghetti Pasta (Non dairy, Non Soy)

  • 1 package brown rice spaghetti
  • 1 Tablespoon non soy non dairy butter/margarine (May not be needed, if you use Presidents Choice brown rice spaghetti, you will need it as it tends to stick together otherwise)
  • 2 mini cucumbers peeled and diced
  • 4 Tablespoons Vegenaise (non soy, non dairy)
  • Garlic powder to taste
  • Onion powder to taste
  • Green Onion to taste I used 2
  • Salt and pepper to taste
Cook spaghetti according to package directions
While that is cooking, slice and dice the cucumbers and onions, set aside covered in the fridge
When pasta is cooked, drain, and rinse with cold water till the pasta feels cold.
Place pasta in a big bowl, now add the vegenaise, cucumbers, onions, and spices, mix well.
Serve right away or cover and put in the fridge for a couple hours or till the next day.

I use a whole package of spaghetti because I love left overs of this dish, it tastes better the next day after the flavors have mingled together.

A friend came up with the idea when I was looking for something different for dinner besides rice
