Artichokes with Parmesan Cheese
- 3 large or 6 small artichokes
- 4 quarts boiling water
- 3 tablespoons salt
- 2 tablespoons vinegar
- 1/2 cup grated Parmesan cheese
- 1/2 cup butter
- Pepper, salt
- 1/2 cup strong bouillon
With a sharp knife, cut off about 1 1/2 inches of the tips of the artichokes. Cook artichokes in boiling, salted water and vinegar until half done. Drain artichokes, cut them in halves, remove the inner white fibers, and place the halves in a buttered mold. Sprinkle with cheese and dot with butter. Season with pepper, some salt, and bouillon. Then cover the mold and bake the artichokes in a slow oven at 300°F., for 2-3 hours. Serves 6.
