Artichoke Fritters

  • 6 or 8 Jerusalem artichokes
  • fritter batter
Pare and slice thin the artichokes. Dip slices into batter, and fry a delicate rich golden brown in hot fat. Dust each with pepper and salt, and serve hot in a napkin.
