Apricot Stuffing for Duck

  • 1/2 pound dried apricots
  • 2 cups bread crumbs
  • 1/4 cup cracker crumbs
  • 1 1/2 teaspoon salt
  • 1/4 teaspoon paprika
  • 4 tablespoons chopped celery
  • 1 tablespoon minced parsley
  • 4 tablespoons shortening, melted
Wash the apricots, cover with cold water and cook until tender. Drain (save liquid; it can be used for making sauces and puddings) and chop apricots fine. Combine the crumbs with the seasonings, celery and parsley. Slowly stir in the melted shortening; then add the chopped apricots. Mix completely.
