Apricot Refrigerator Cake
- 1 cup sugar
- 1/2 cup apricot juice
- 4 egg whites, beaten stiff
- Few grains salt
- 1 pint whipping cream
- 1~2 1/2 can apricots
- 1 pound vanilla wafers, lady fingers, angel food or white cake
Boil sugar and apricot juice to a thread; pour atop egg whites bating until cooled; add whipped cream and mashed, drained apricots. Put a layer of vanilla wafers; split lady fingers, or piece of cake in bottom of paper-lined mold; cover with layer of cream mixture and repeat until mold is filled, finishing with the cream layer. Chill. Serves 16.
