Apricot or Peach Jam
- Apricots or peaches
- 1 pound of double-refined sugar
- 3 spoonful of water
Pare the ripest apricots or peaches you can get, and cut them thin. To every pound and a half of fruit, add a pound of double-refined sugar, and three spoonful of water; boil your sugar to a candy height, then put in your apricots or peaches; stir them over a slow fire till they look clear and thick; but do not let them boil, only simmer.
