Apricot Fluff

  • 1 cup cooked apricots
  • 1 teaspoon pineapple or other flavoring
  • lady fingers
  • 2 cups whipping cream
  • 1/3 cup powdered sugar
  • maraschino cherries
Drain apricots, then mash to a pulp. Whip cream until firm, but not too stiff. Add sugar and flavoring, then fold in apricot pulp. Line sherbet glasses with lady fingers, and fill with mixture. Garnish with maraschino cherries. Chill before serving.
