Anchovy Sauce
- 4 anchovies, boned
- Drawn-butter sauce
- Cayenne (optional)
Bruise the boned anchovies in a mortar to a smooth paste. Stir them in a drawn-butter sauce and simmer for 5 minutes, or stir in 2 teaspoons of essence of anchovy. A little cayenne is an improvement.
